Apple Skillet Cake, My Way

Ingredients
  • 1 tablespoon butter or ghee, cow/goat

  • 4 apples, peeled and sliced

  • About 2 Tablespoons sweetener (Agave, Maple Syrup, Honey, Coconut sugar)

  • Spices (according to your nutrition plan)

    • ____Cinnamon

    • ____Nutmeg

    • ____Cloves

    • ____Ginger

    • ____Allspice

    • ____Tablespoons Molasses

  • ¼ to ½ cup raisins, prunes

  • ¾ cup your flour mixture

  • ­­­­­about 1/3 cup sweetener, agave, maple syrup, honey, coconut sugar

  • 1/8 teaspoon salt

  • 2 eggs, chicken, duck or turkey

  • 1 egg white 

  • 1 ½ cups milk, almond, rice, oat, or other

  • 2 teaspoons vanilla extract, or other extract, almond, raspberry

 

Preheat oven to 375º


Melt the butter in a medium ovenproof skillet.  Add the apples & cook for 2 minutes.  Add sweetener, spices & raisins/prunes.  Cook, stirring for 5 minutes, or until apples are tender. 

Remove from the heat spread apples evenly over the bottom of the skillet.

Meanwhile, in a large bowl, combine flour, sweetener & salt.


In a medium bowl, combine the milk, eggs, egg white & extract.  Add to the flour mixture & stir just until blended.  Pour over the apple mixture in the skillet.


Bake 40 minutes, or until golden brown and puffed. Remove to rack to cool for 5 minutes.
